Here’s what I’ve been up to this week…

One of our favorite meals is homemade Macaroni and Cheese! The perfect make-ahead meal to enjoy later on in the day.

In my quest to get more organized, I created this Back-to-School-Erasable-Paint-Chip-Calendar! I know those little squares will start filling up fast once school starts!

Cinnabon Cinnamon Roll Cake | Joy in Our Home

Today I’d love to share a recipe with you that’s been floating around Pinterest for quite a while now. I am soo glad I gave this recipe a try because my oh my! It is everything that a gooey, sweet, warm cinnamon bun is … minus all the work! For our family, it is the perfect Saturday morning brunch item. Please tell me you’ll try this as soon as possible… your family will thank you over and over, and ask you to make it again the next day!

Cinnabon Cinnamon Roll Cake Ingredients:

 3 cups flour 1/4 tsp salt 1 cup sugar 4 tsp baking powder 1 1/2 cup milk 2 eggs 2 tsp vanilla 4 tablespoons butter, melted 1 cup butter, softened 1 cup brown sugar 2 tablespoons flour

1 tablespoons cinnamon

Glaze:

2 cups icing sugar 5 tablespoons milk

1 tsp vanilla

Best ever Snickerdoodles | Joy in Our Home

Happy Friday everyone
I am not sure where this recipe has been all my life… would you believe I have never had a Snickerdoodle cookie before? The smell of these baking in the oven told me I would love them! I love cookies that stay soft and these ones will not disappoint!

These cookies have become a favorite in our home… with our children and us! Please try them out, you will not be disappointed!

Ingredients:

  • 1 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 3/4 cups flour
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 TB sugar
  • 1 tsp. cinnamon
  1. Mix together flour, cream of tartar, baking soda, and salt together. Set aside.
  2. Cream together sugar and butter. Add eggs and blend well.
  3. Add dry ingredients to wet ingredients and mix well.
  4. Shape dough into 1 inch balls and roll in the cinnamon-sugar mixture.
  5. Place 2 inches apart on ungreased cookie sheet.
  6. Bake for 8-10 minutes at 350 degrees. (Makes about 4 dozen cookies)

Vegetable Fried Rice | Joy in Our Home

Happy Wednesday y’all!

How’s your week going? All of a sudden, it feels like the days are getting busier. For us, it’s lots of walks to the park, bike rides, and just spending time outside. Which means, less time in the kitchen. Eating ready-made boxed food is not an option for our family, so I’m always on the look out for nutritious meal ideas and if they are quick to whip up, it’s a bonus for days that are busy.
Our family loves, loves rice. And this fried rice is one of our favorite ways to eat it. I’ll often cook the rice in the morning and then just refrigerate until I’m ready to throw it together. What I love about it too, is that it’s so versatile. It’s one of those recipes that you can omit whichever veggies your family doesn’t like and add the ones you do enjoy!

Ingredients:
* 2 cups cooked rice

* 1/8 cup each, carrots and celery, chopped

* 1/8 cup frozen peas

* 1 garlic (chopped)

* 2 tbsp. soya sauce (we use sodium-reduced)

* 2 tbsp. extra virgin olive oil

* 2 tbsp. chicken soup base mix

* 1 tbsp. sesame seeds

Cook rice according to instructions. Let cool. In a medium size bowl, mix rice, carrots, celery, peas, garlic, soya sauce, oil and chicken soup base mix. Fry until browned. Add sesame seeds before serving. (Optional: A few minutes before fried rice is ready, I often scramble an egg and mix with the fried rice.)

Mom’s Banana Muffins | Joy in Our Home

Hello Friends! Hope you are all having a great week. With the cold weather we’ve been having, one of the things I enjoy most, is turning the oven on and baking something. These muffins were the first thing that came to mind today. I have tried many different banana muffin and bread recipes the last few years, but I always keep coming back to this one. It’s Mom’s recipe and somehow, it just tastes like home. And I love that. Hope you enjoy it as well.

Mom’s Banana Muffins

* 1 cup white sugar

*  1/2 cup butter, softened

* 1 egg

* 1 cup mashed bananas (very ripe)

*1/2 tsp vanilla

*1 1/2 cups flour

* 1 tsp baking soda

* 1 tbsp. hot water

* chocolate chips, optional

Cream sugar, butter and eggs with electric beater until mixed. Add banans and vanilla and mix well. Dissolve baking soda in hot water. Add flour and baking soda mixture and beat just until mixed. Bake at 350F for 25minutes or pick inserted in middle comes out clean. Freezes well
