Good Morning Friends!

If you’re enjoying all things pumpkin this fall, I would love to share a recipe with you today that you “need” in your life! The best (and super easy to whip up) Pumpkin Muffins I’ve ever had!

When a good friend of ours shared these with us, I had to have the recipe! I love that it makes a big batch because they freeze so well and are perfect for school lunches or anytime-snacking!

Now that fall is here, there is nothing as cozy or homey to me as the smells of baking coming from the kitchen! And these Pumpkin muffins will not disappoint you! Check out my Homemade Pumpkin Puree recipe that I posted a few weeks ago… I used it in this recipe and love that these muffins are totally homemade!

 

Best Ever Pumpkin Muffins

  1. 4 1/2 cups flour
  2. 3 tsp. baking powder
  3. 2 tsp. baking soda
  4. 1 1/2 tsp. salt
  5. 3 tsp. cinnamon
  6. 2 1/2 cups oil
  7. 3 cups white sugar
  8. 6 eggs
  9. 3 1/2 cups pumpkin puree
  1. Preheat oven to 375F.
  2. Mix dry ingredients together.
  3. Beat wet ingredients until mixed, using an electric beater.
  4. Combine wet and dry ingredients using beater.
  5. Grease muffin tin and bake for 15-20 or until a toothpick inserted in middle comes out clean.
